Extra Virgin Olive Oil by Salt & Fire
Since 2023 we have been cultivating our olive grove with specific agricultural methods with one thing in mind. To be able to produce Extra Virgin Olive Oil with excellent organoleptic characteristics and gastronomic interest.
Our EVOO chemical analysis indicates a total of 1500 mg/kg of oleocanthal and oleacein and an acidity of just 0.34% which makes it one of the high phenolic olive oils of the mediterranean. Phenolic compounds are relevant for great cardiovascular health and are responsible for the pungency and spiciness of good quality Olive oils.
Salt and Fire EVOO Coupage Natural is fruity, spicy, and herbaceous, with aromas and notes that are a true reflection of the Koroneiki variety, which makes up 90% of our olive grove.
