Black Angus or Wagyu?

When I first heard terms like marbling score, Black Angus, Wagyu, and Kobe, I was both intrigued and confused. To understand them better, I had to dig into the facts and, of course, taste the beef myself.

Black Angus and Wagyu are two of many cattle breeds known for exceptional flavor. The key difference is in their genetics: Wagyu naturally stores more fat within its muscles, making it juicier than Black Angus when fed the same diet.

Wagyu beef originated in Japan (Wagyu literally means "Japanese cow"). It’s so common in Japan that authentic Japanese Wagyu beef is certified by regions, much like wine is in France with Champagne or Bordeaux. In Japan, you’ll find varieties like Kobe, Miyazaki, and Matsusaka, among others. There are also four different breeds of Japanese cattle that qualify as Wagyu, but we won’t delve into that now.

Many countries have imported Wagyu cattle for breeding and production, and as of 2024, Wagyu is produced on every continent, with Japan and Australia leading the market. This raises significant questions about consistency and quality. Simply naming something Wagyu or Black Angus doesn’t necessarily guarantee quality. For this reason, major beef-producing countries have developed grading systems and certification processes to ensure a fair and consistent customer experience. While grading schemes vary by country, with some focusing solely on appearance and others considering factors like firmness and texture, it’s important to remember that not all criteria are the same.

Ultimately, the taste of beef is influenced by breed, feeding, animal welfare, and more. While Wagyu is often the juiciest, don't just rely on breed names. Explore further—ask about the farm, the animal's diet, and most importantly, taste with an open mind. Some of my best steak experiences have come from unexpected sources.
